Georgios Beef in Metaxa

We are missing Symi so much as we would have been there since Friday if the world hadn't stopped.

We usually have the Beef in Metaxa at Georgios the first night and fancy trying to re-create this week as we take a few days off work.

Any tips? Cuts of meat and how to create the sauce?

I'm thinking flank or skirt of beef if I can get hold of any.

Need to search out Metaxa too. :)

I usually have the Beef in Metaxa on my first visit to Georgios too. It's one of my favourite dishes and a real reminder of Symi. Not that I'd be able to make it as I don't even have any Metaxa and I'm not sure that the Honeybee brandy that I've got left over from my last trip to Goa would give quite the same taste :?:

My recipe....

Beef in Metaxa Sauce

Ingredients

Made 2 very large portions!

Approx 500g Beef Braising Steak. (You can use skirt, flank or shin beef)
Salt & Black Pepper
Olive Oil
2 Knorr beef stock pots
2 sticks of celery (chopped roughly)
2 large carrots (chopped roughly)
1 medium onion (sliced)
3 Garlic cloves (bashed but left whole)
Mushrooms (2/3 of punnet) (sliced)
White Rice
Fennel Seeds
Orzo Pasta
Cornflour
3 Star Metaxa
Knob of butter
Cyprus Potatoes (chipped) Maris Pipers are good alternative.

Method

1. Heat a tablespoon of Olive Oil in a pan until just smoking, season beef on one side with salt and black pepper and brown quickly seasoned side down for approx 1 minute. Season top side and turn over to brown other side. Take out beef and add sliced onions and fry until just showing a little colour)

2. In a heavy crockpot or casserole dish add the celery, carrots, onions and garlic. Add the beef and cover with enough of mixed stock to cover the beef well. Add a small amount of Metaxa and place in a pre-heated oven at 150°c for approx 3 hours or until the beef is very tender and falling apart. Rest the beef for a few minutes before serving.

3. In the meantime, fry chips, cook rice and Orzo pasta as per packet instructions. I put a few teaspoons of fennel seeds in my rice for taste. Mix rice and Orzo together.

4. Ladle some of the stock from the pot into a frying pan leaving behind all the veg apart from the mushrooms and reduce slightly before adding the Metaxa to taste and adding any more seasoning before using a little cornflour, mixed with water, to slightly thicken the sauce. Just before serving add a knob of butter to add a sheen to the sauce.

Serve and enjoy!

That looks delicious - I could almost be in Georgios, I just need some house wine in one of the little jugs to accompany it ;)

We have a selection of the metal ones Gemma so could pretend we are there with the wine too! :)

Nice one silverfox. I know I'm in Greece when my wine comes in a metal jug :D
